The grapes are harvested at optimal ripening to obtain a wine rich in aromatic components, while preserving freshness.
After the first fermentation lasting a week, the wine is aged on fine lees for about six months with frequent battonage that increase the body and intensity of the aromas.
Filtration is carried out to prepare the wine for partial dealcoholisation (up to 6% vol.).
This phase involves the separation of part of the alcohol from the vinous matrix through selective membranes, which allow only the alcohol to pass and then be removed from the wine.
The last stage of production is the preparation of the wine for bottling, with an additional filtration stage that guarantees the perfect clarity of the dealcoholised wine.
