The ruby red colour with light violet reflections is intense, indicating a complete ripening of the grapes. The shade of red is lively to indicate the youth of wine. The consistency is smooth, to testify the lightness of this partially dealcoholised wine.
The predominant notes are those of red berry fruit, such as cherry and small berries, accompanied by hints of black fruit, especially blackberry and plum. You can also perceive hints of sweet spices, such as vanilla and cinnamon, and a distinctive hint of black pepper that enhances the minerality.
On the palate is medium-strong but well integrated. The texture is velvety and the tactile sensation is enveloping and slightly tannic. The flavors of red and black berry fruit are integrated with delicate notes of spices creating a rich and harmonious taste profile. The grapes are harvested at optimal ripening to obtain a wine rich in aromatic components, while preserving freshness.
The red wine making process involves the fermentation of the must together with the skins, followed by the pressing of the pomace and the separation of the red wine.
The wine is aged on fine lees for about six months with frequent battonage to increase its body and intensity of aromas.
Filtration is carried out to prepare the wine for partial dealcoholisation (up to 6% vol.).
This phase involves that part of the alcohol is separated from the vinous matrix through selective membranes, which allow only the alcohol to pass and then be removed from the wine.
The last stage of production is the preparation of the wine for bottling, with an additional filtration stage that guarantees the perfect clarity of the dealcoholised wine.
